Turkey Bolognese with Shell Pasta

Ingredients
- 1 teaspoon olive oil
- 12 ounces turkey, lean, ground
- 1/4 teaspoon salt
- 8 ounces pasta shells, uncooked
- 1 cup onion, chopped
- 1 cup carrots, diced
- 1/2 cup celery, diced
- 3 cloves garlic, minced
- 4 tablespoons tomato paste, no salt added
- 1/2 cup grated Parmesan cheese, grated
Directions
- Heat 3 quarts of water in a large saucepan over high heat and bring to a boil.
- While water is heating to a boil, heat oil in a large pan over medium heat. Add turkey, sprinkle with salt, and cook 5-7 minutes until browned. Stir occasionally.
- When water boils, add pasta and cook to al dente per package directions, usually 10-12 minutes. Drain pasta when cooked.
- Add onions, carrots, celery to the skillet with turkey, and cook 8-10 minutes until soft, but not browned.
- Add garlic and cook 30 seconds until fragrant. Add tomato paste and simmer for another 5 minutes.
- Add pasta to turkey mixture, and stir to blend.
- Serve hot and top with parmesan cheese.
Recipe Tips
Use any type of ground meat in place of ground beef, such as turkey, pork, or chicken.
Cook sauce to reach internal temperature of 165 degrees F before adding pasta.
Use any type of pasta on hand.
