Sweet Potato Pancakes

Ingredients
- 1 medium sweet potato, washed and grated
- 2 large eggs
- 1/4 cup flour
- 1/2 teaspoon salt
- 2 tablespoons oil
Directions
- Lay grated potatoes between 2 pieces of paper towel and press as much moisture out as possible.
- Mix potatoes and eggs in a bowl.
- Mix flour and salt together and then blend this into the potato mixture.
- Heat oil in skillet and add flattened spoonfuls of the potato mixture.
- Cook 5 minutes on each side or until browned.
- Serve!
