Spaghetti with Chicken and Grape Tomatoes

Ingredients
- 1 tablespoon canola oil
- 1 pound chicken breast, skinless and boneless cubed
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 8 ounces whole wheat spaghetti, uncooked
- 6 cloves garlic, smashed
- 2 teaspoons olive oil
- 1 pint grape tomatoes, halved
- 4 tablespoons basil, chopped
Directions
- Bring a large pot of water to boil.
- While water is heating, Heat canola oil over medium-high heat in a skillet. Season chicken with salt, pepper, oregano, and dried basil.
- Add chicken to hot skillet and cook 5-6 minutes. Flip and cook additional 4-5 minutes until done. Remove from pan.
- Add pasta to boiling water and cook per directions, 7-9 minutes for al dente. Reserve 1/2 cup cooking liquid before draining.
- While pasta cooks, in same skillet as chicken was cooked, heat olive oil over medium-high heat.
- Add garlic and cook until golden brown, about 1-2 minutes.
- Add tomatoes and reduce heat to medium-low. Cook about 4-5 minutes.
- Add cooked pasta to tomatoes and garlic, toss to coat. Add in basil and chicken.
- Warm until chicken is reheated and serve.
Recipe Tips
Top with grated cheese.
If you don't have fresh tomatoes, drain 1 14.5-ounce can diced tomatoes and use those instead.
Chicken should register 165 degrees F internal temperature.
