Spaghetti with Chicken and Grape Tomatoes

Instructions
  1. Bring a large pot of water to boil.
  2. While water is heating, Heat canola oil over medium-high heat in a skillet. Season chicken with salt, pepper, oregano, and dried basil.
  3. Add chicken to hot skillet and cook 5-6 minutes. Flip and cook additional 4-5 minutes until done. Remove from pan.
  4. Add pasta to boiling water and cook per directions, 7-9 minutes for al dente. Reserve 1/2 cup cooking liquid before draining.
  5. While pasta cooks, in same skillet as chicken was cooked, heat olive oil over medium-high heat.
  6. Add garlic and cook until golden brown, about 1-2 minutes.
  7. Add tomatoes and reduce heat to medium-low. Cook about 4-5 minutes.
  8. Add cooked pasta to tomatoes and garlic, toss to coat. Add in basil and chicken.
  9. Warm until chicken is reheated and serve.
Recipe Notes

Top with grated cheese.

If you don’t have fresh tomatoes, drain 1 14.5-ounce can diced tomatoes and use those instead.

Chicken should register 165 degrees F internal temperature.
