Simple Fish Tacos

Ingredients
- 1 pound cod fillets, cut into 1" pieces
- 1 teaspoon olive oil
- 2 tablespoons lemon juice
- 1 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- 1 teaspoon ground cumin
- 12 6-inch corn tortillas
- 2 cups cabbage, shredded
- 2 cups tomatoes, chopped
- 1/4 cup non fat sour cream
Directions
- In a medium bowl, combine first 8 ingredients. Mix thoroughly.
- Heat medium skillet over medium heat and add contents of bowl. Cook 5 minutes, or until fish flakes easily with a fork.
- Fill tortillas with fish mixture and top with remaining ingredients. Serve warm
Recipe Tips
Use any type of white fish fillets. If using frozen fish, let thaw overnight in the refrigerator.
Try adding mango or pineapple to the tomatoes for a tropical salsa.
Serve with beans and rice as a side dish.
