Directions

  1. Preheat the oven to 450°F.
  2. Slice the spaghetti squash in half lengthwise and scrape out the seeds.
  3. Drizzle each half with the olive oil and season with salt, pepper, and herbs if using.
  4. Spray a baking sheet with nonstick cooking spray and place each half on the pan, flesh side down.
  5. Bake for 25-35 minutes or until the skin pierces easily with a fork. Let the squash cool for about 10 minutes or until it is cool enough to handle.
  6. Use a fork to scrape out strands of spaghetti squash and serve as a side or as a pasta substitute.
