Roasted Spaghetti Squash

Ingredients
- 1 medium spaghetti squash
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon dried herbs such as oregano or basil (optional)
Directions
- Preheat the oven to 450°F.
- Slice the spaghetti squash in half lengthwise and scrape out the seeds.
- Drizzle each half with the olive oil and season with salt, pepper, and herbs if using.
- Spray a baking sheet with nonstick cooking spray and place each half on the pan, flesh side down.
- Bake for 25-35 minutes or until the skin pierces easily with a fork. Let the squash cool for about 10 minutes or until it is cool enough to handle.
- Use a fork to scrape out strands of spaghetti squash and serve as a side or as a pasta substitute.
