Red Hot Fusilli

Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 cup parsley, chopped
- 4 cups tomatoes, chopped
- 1 tablespoon basil, chopped
- 1 teaspoon oregano, dried
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 8 ounces fusilli pasta, uncooked
- 8 ounces chicken breast, boneless and skinless, diced (optional)
Directions
- Heat oil in a medium saucepan over medium heat. Saute garlic and parsley until golden.
- Add tomatoes and spices. Cook uncovered over low heat 15 minutes or until thickened, stirring frequently.
- Add chicken and continue cooking for 15 minutes until chicken is heated through and sauce is thick.
- Cook pasta according to package directions until al dente.
- To serve, spoon sauce over pasta and sprinkle with coarsely chopped parsley.
Recipe Tips
Serve hot or cold. This makes great leftovers for a lunch.
