Quick Sauteed Greens

Ingredients
- 1 tablespoon olive or canola oil
- 2 pounds fresh collard greens, kale or mustard greens, washed, stems removed, and chopped
- 1 bunch scallions
- 3 cloves garlic, minced
- 1/4 teaspoon salt
- 2 tablespoons water
- dash crushed red pepper
Directions
- Heat oil in a large skillet, add garlic and scallions and saute until slightly wilted, about 1-2 minutes.
- Add the rest of the ingredients, stirring well.
- Cover the pan, and cook over low heat 8-10 minutes, stirring occasionally.
Recipe Tips
You can use 1/2 cup chopped onion in place of scallions.
