Potato Casserole

Ingredients
- 1 tablespoon oil
- 4 medium potatoes, thinly sliced
- 1 medium onion, sliced
- 1 tablespoon butter
- 1 cup low-sodium chicken broth
- 1/2 cup cheddar cheese, grated
Directions
- Preheat oven to 375ºF. Lightly grease a baking dish with the oil.
- Lay half the potatoes in dish. Put onions on top of the potatoes.
- Top with remaining potatoes and dot with butter.
- Pour broth over potatoes.
- Cover and bake for 1 hour.
- Remove foil and top with cheese. Bake for 5 minutes to melt cheese.
- Serve warm.
