Pineapple Muffins

Ingredients
- 1 cup crushed pineapple with juice
- 1 egg white
- 1/2 cup low fat milk
- 1/3 cup brown sugar
- 3 tablespoons oil
- 1 3/4 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
Directions
- Preheat oven to 400ºF.
- Drain pineapple, saving 1/4 cup of juice.
- Mix egg white, milk, brown sugar, oil, pineapple and juice together in a bowl.
- In a separate bowl, combine remaining ingredients.
- Add pineapple mixture to the flour mixture and stir until moist.
- Fill greased muffin tins 3/4 full.
- Bake for 13-15 minutes until golden brown.
