Directions

  1. Preheat oven to 400ºF.
  2. Drain pineapple, saving 1/4 cup of juice.
  3. Mix egg white, milk, brown sugar, oil, pineapple and juice together in a bowl.
  4. In a separate bowl, combine remaining ingredients.
  5. Add pineapple mixture to the flour mixture and stir until moist.
  6. Fill greased muffin tins 3/4 full.
  7. Bake for 13-15 minutes until golden brown.
