Peanut-Butter Banana Flapjacks

Ingredients
- 1 cup all purpose-flour
- 2 tbsp sugar
- 2 tsp baking powder
- 2 medium ripe bananas
- 1 cup low fat milk
- 1 large egg or 1/4 cup liquid egg
- 2 tbsp canola oil
- 1/2 tsp vanilla extract
- 2 tablespoons peanut butter
- Cooking Spray
Directions
- In a small bowl, combine the flour, sugar, and baking powder. Stir to combine.
- Add the bananas to a medium bowl and mash with a fork. Add milk, egg, oil, vanilla, and peanut butter. Stir to combine.
- Add dry ingredients into the banana mixture. Stir until combined; mixture should be slightly lumpy.
- Add cooking spray to a skillet over medium heat. By ¼-cupfuls, ladle batter into the skillet to form pancakes. Cook 1–2 min., until edges begin to set and bubbles appear.
- Flip pancakes and cook another 2 min. Transfer to a plate. Repeat until all the batter is used, adding cooking spray to the pan between batches.
Recipe Tips
Add-Ins:
Dice up a medium apple into very small pieces and after adding the batter to the pan, sprinkle about 1 tablespoon of apple on the top.
Add 1-2 teaspoons of chocolate chips to each pancake for added sweetness.
Add 1 tablespoon chopped dried fruit (like raisins, cranberries, or apricots) to each pancake.
