  1. In a small bowl, combine the flour, sugar, and baking powder. Stir to combine.
  2. Add the bananas to a medium bowl and mash with a fork. Add milk, egg, oil, vanilla, and peanut butter. Stir to combine.
  3. Add dry ingredients into the banana mixture. Stir until combined; mixture should be slightly lumpy.
  4. Add cooking spray to a skillet over medium heat. By ¼-cupfuls, ladle batter into the skillet to form pancakes. Cook 1–2 min., until edges begin to set and bubbles appear.
  5. Flip pancakes and cook another 2 min. Transfer to a plate. Repeat until all the batter is used, adding cooking spray to the pan between batches.

Recipe Tips

Add-Ins:

Dice up a medium apple into very small pieces and after adding the batter to the pan, sprinkle about 1 tablespoon of apple on the top.

Add 1-2 teaspoons of chocolate chips to each pancake for added sweetness.

Add 1 tablespoon chopped dried fruit (like raisins, cranberries, or apricots) to each pancake.
