  1. Preheat oven to 500 degrees F. Combine first 7 ingredients in a small bowl.
  2. Rub spices over pork and place in lightly greased roasting pan. Bake 20 minutes until cooked, remove and rest for 5 minutes.
  3. While pork is cooking, heat oil in skillet over medium-high heat.
  4. Add onions to hot skillet and cook 5-7 minutes until soft and begin to brown. Add rice to pan, and stir in for 2 minutes.
  5. Add water to skillet and bring to boil. Cover, reduce heat to low, and simmer for 25-30 minutes until rice is tender.
  6. Slice pork tenderloin and serve over rice.

Recipe Tips

Use any type of rice in this recipe.

For added vegetables, add 8 ounces sliced mushrooms with the onions.

Pork should register 145 degrees F internal temperature.
