Paprika Pork Tenderloin

Ingredients
- 1 1/2 tablespoons paprika
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon brown sugar
- 1/2 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 pound pork tenderloin
- 1 teaspoon canola oil
- 3 medium onions, chopped
- 1 cup brown rice, uncooked
- 2 1/4 cups water
Directions
- Preheat oven to 500 degrees F. Combine first 7 ingredients in a small bowl.
- Rub spices over pork and place in lightly greased roasting pan. Bake 20 minutes until cooked, remove and rest for 5 minutes.
- While pork is cooking, heat oil in skillet over medium-high heat.
- Add onions to hot skillet and cook 5-7 minutes until soft and begin to brown. Add rice to pan, and stir in for 2 minutes.
- Add water to skillet and bring to boil. Cover, reduce heat to low, and simmer for 25-30 minutes until rice is tender.
- Slice pork tenderloin and serve over rice.
Recipe Tips
Use any type of rice in this recipe.
For added vegetables, add 8 ounces sliced mushrooms with the onions.
Pork should register 145 degrees F internal temperature.
