Mushroom Topped Pork Chops

Ingredients
- 6 4-ounce pork chops, center-cut
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon canola oil
- 3 medium onion, chopped
- 8 ounces mushrooms, sliced
- 2 medium summer squash, diced
- 1 10.75-ounce can cream of mushroom soup, condensed
Directions
- Season pork chops with pepper, salt and garlic powder.
- Heat oil in a large skillet over medium high heat. Add the pork chops and cook 3 minutes each side until browned.
- Add the onion, mushrooms and summer squash and cook 4-5 minutes, until soft.
- Pour the cream of mushroom soup over chops. Cover skillet, reduce heat to medium low and simmer for 20-25 minutes until pork chops reach internal temperature of 145 degrees F.
- Serve warm.
Recipe Tips
Serve over pasta or egg noodles.
Alternatively, after browning pork chops, place in a baking dish, top with onions, mushrooms, and summer squash. Pour soup over the top and cover dish. Bake at 350 degrees F for 30 minutes until pork chops are cooked.
Add 1/2 teaspoon cayenne pepper or red pepper flakes for added spice.
