Hearty Vegetable Beef Soup
This soup is delicious and high protein, meaning it will keep you full and satisfied for longer!

Ingredients
- 1 1/4 cups chicken broth, low-sodium
- 1/2 cup water
- 2 cups mixed vegetables, frozen, for soup
- 1 14.5-ounce can diced tomatoes, drained
- 4 ounces beef, ground, 85% lean, cooked
- 1 teaspoon thyme, dried
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 bay leaf
- 1 1/4 cups pasta, thin, uncooked
Directions
- Heat broth and water over medium heat. Add vegetables, meat and seasonings.
- Bring to boil, reduce heat and boil gently, uncovered, for 15 minutes.
- Add noodles. Cook until noodles are tender, about 10 minutes
- Remove bay leaf.
