Garden Cannellini Bean Salad
Beans are a great source of fiber and provide plant protein, both of which help to keep you full and satisfied for longer. This salad is a great option for a healthy lunch or dinner!

Ingredients
- 1 tablespoon olive oil
- 2 teaspoons white wine vinegar
- 1/2 cup apple juice
- 1 tablespoon tomato basil garlic seasoning blend, no-salt
- 1/2 cup almond slivers, toasted
- 2 tomatoes, coarsely chopped
- 1/2 yellow bell pepper, chopped
- 1/2 cucumber, peeled, chopped
- 3 green onions, sliced
- 2 15-ounce cans beans, cannellini, drained and rinsed
- 1 head romaine lettuce
Directions
- Whisk together oil, vinegar, apple juice, and seasoning in a small bowl.
- In a medium bowl, toss dressing with all ingredients except lettuce.
- Refrigerate until ready to serve.
- To serve, place lettuce leaves on individual plates; top with salad.
