Cuban Style Pork and Sweet Potatoes

Ingredients
- 1 1/2 pounds sweet potatoes, peeled and cut into 1/2" cubes cut into 1/2" cubes
- 1 pound pork tenderloin cut into 1" squares
- 1 14.5-ounce can diced tomatoes with green chiles
- 1 medium onion, diced
- 1/4 cup orange juice
- 1 1/2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon black pepper
- 1/4 cup cilantro, chopped
Directions
- Mix all ingredients except cilantro in a slow cooker.
- Cook on low for 6 hours. Top with cilantro and serve warm.
Recipe Tips
Serve over brown or white rice.
Add other vegetables, such as corn or bell peppers for the last 45 minutes.
Add 1 15-ounce can black beans, drained and rinsed, for extra fiber.
