Instructions
  1. Mix all ingredients except cilantro in a slow cooker.
  2. Cook on low for 6 hours. Top with cilantro and serve warm.
Recipe Notes

Serve over brown or white rice.

Add other vegetables, such as corn or bell peppers for the last 45 minutes.

Add 1 15-ounce can black beans, drained and rinsed, for extra fiber.
