Directions

  1. Heat oil in a large soup pot over medium heat. Add onion and cook 5 minutes until soft.
  2. Add chicken broth, water, chicken, and rice. Lower heat to medium-low and simmer 25-30 minutes until rice is almost tender.
  3. Add cream of chicken soup and lemon juice. Cook additional 5-10 minutes, stirring occasionally, until heated through.
  4. Serve warm.

Recipe Tips

Add carrots and celery for extra fiber.

Use any type of rice.  If using white rice, decrease simmer time to 15-20 minutes.

Freeze leftovers in individual serving sizes for easy meals.  Use within three months.
