Chicken Pasta with Greens
This pasta recipe features whole wheat pasta which add fiber and minerals to the dish. It also has spinach which is an excellent source of vitamin A!

Ingredients
- 16 ounces whole wheat spaghetti
- 1 tablespoon canola oil
- 1 pound chicken breast, boneless and skinless cut into 1" pieces
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 6 cups spinach, chopped
- 1 15-ounce can cannellini beans, no salt added
- 2 cups low-sodium chicken broth
- 1 teaspoon Italian seasoning
Directions
- Prepare the spaghetti according to package to al dente. Drain.
- Heat oil in a large skillet over medium heat.
- Add chicken and cook 5 minutes, until browned on all sides. Add onion when hot and cook for 5 minutes, until soft.
- Add garlic and cook until fragrant, another 30 seconds.
- Add spinach, beans, broth, and Italian seasoning. Cook for 3 minutes.
- Add in cooked pasta and stir to combine. Cook for 5 minutes until pasta is heated through. Serve warm.
Recipe Tips
Use any type of pasta on hand.
Use mixed greens, swiss chard, or any other greens.
Use water in place of chicken broth.
