  1. Prepare pasta al dente according to package instructions. Drain.
  2. Heat oil in a large skillet over medium heat. Season chicken with Cajun seasoning.
  3. Add chicken to skillet and cook 5-7 minutes until browned.
  4. Add peppers, mushrooms, and scallions. Cook additional 2-3 minutes.
  5. Reduce heat to medium-low and add the milk, basil, and garlic powder. Cook until heated through.
  6. Add cooked pasta and toss to coat. Heat through.
  7. Serve warm and top with parmesan cheese.

Use any type of pasta- try whole wheat pasta for more fiber.
