Chicken Cacciatore
Cacciatore means hunter in Italian. This classic, rustic dish features rich flavors from tomato, garlic, and mushrooms. It is delicious, healthy and can be served by itself or with pasta.

Ingredients
- 1 pound chicken breast, boneless and skinless
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 teaspoons olive oil
- 1 medium red bell pepper, sliced
- 1 medium onion, sliced
- 1/2 pound white mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup white cooking wine
- 1 14.5-ounce can whole tomatoes, undrained tomatoes chopped
- 1/2 teaspoon oregano
- 1/8 teaspoon red pepper flakes (optional)
Directions
- Pat chicken dry and season with salt and pepper.
- Heat oil in skillet over medium-high heat. Add chicken and cook 4 minutes on each side, until browned. Remove from pan.
- Reduce heat to medium and add the pepper and onion. Cover and cook, stirring occasionally until they soften, about 5 minutes.
- Add the mushrooms and cook, uncovered until browned, about 3-5 minutes. Add the garlic, stirring until fragrant, about 30 seconds.
- Add the cooking wine and cook until reduced by half, about 10-15 minutes.
- Add the tomatoes, oregano, and red pepper flakes. Simmer for 10 minutes.
- Add chicken back to skillet, cover, reduce to medium-low and cook another 20 minutes until chicken is done.
