Ingredients
Instructions
  1. Pat chicken dry and season with salt and pepper.
  2. Heat oil in skillet over medium-high heat. Add chicken and cook 4 minutes on each side, until browned. Remove from pan.
  3. Reduce heat to medium and add the pepper and onion. Cover and cook, stirring occasionally until they soften, about 5 minutes.
  4. Add the mushrooms and cook, uncovered until browned, about 3-5 minutes. Add the garlic, stirring until fragrant, about 30 seconds.
  5. Add the cooking wine and cook until reduced by half, about 10-15 minutes.
  6. Add the tomatoes, oregano, and red pepper flakes. Simmer for 10 minutes.
  7. Add chicken back to skillet, cover, reduce to medium-low and cook another 20 minutes until chicken is done.

Serve over pasta of your choice.

Ensure the chicken reaches an internal temperature of 165 degrees F.
