Black Bean and Rice Salad

Ingredients
- 1/2 cup onion, chopped
- 1/2 cup red pepper, finely chopped
- 1 cup brown rice, cooked and cooled
- 1 15-ounce can black beans, drained and rinsed
- 1/4 cup rice vinegar
- 1/2 teaspoon mustard powder (or 1 1/2 teaspoons prepared mustard)
- 1 clove garlic, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
Directions
- In a large bowl, stir together onions, peppers, rice, and beans.
- In a small bowl, blend together vinegar, dry mustard, garlic, salt, pepper, and vegetable oil.
- Pour dressing over bean mixture and stir to coat evenly.
- Chill for at least one hour. Serve.
