Oyster Cioppino
Cioppino (pronounced CHI-oh-peeno) is an Italian-American fish stew. This recipe uses oysters, but you can use any mixture of fish and shellfish and it will be great.

Ingredients
- 1 pint oysters (save the juice)
- 1 tablespoon oil (or butter)
- 1 medium onion, diced
- 2 cloves garlic, minced (or 1 teaspoon garlic powder)
- 1 15-ounce can low sodium diced tomatoes
- 1/2 cup low-sodium chicken broth (or vegetable broth)
- 1 teaspoon vinegar (red or cider)
- 1 teaspoon dry thyme
Directions
- Separate oysters from the juice, making sure to check for any shell remnants. Set aside. Strain oyster juice through a fine sieve and set aside.
- Heat oil or butter in a large skillet over medium heat. Add onion and sauté until tender, about 5 minutes.
- Add garlic and cook until fragrant, about 1 minutes. Add diced tomatoes, broth, oyster juices, vinegar and thyme. Simmer over medium-low for 20 minutes until flavors meld.
- Add oysters and cook just until the edges curl, about 2 minutes.
Recipe Tips
Serve with toasted crusty bread, or with a side of pasta.
