Easy Red Beans and Rice
This recipe is easy and classic. Beans are a great source of fiber and plant-based protein and utilizing canned beans is an affordable and quick alternative to dried.

Ingredients
- nonstick cooking spray
- 1 onion, chopped
- 1 green pepper, chopped
- 1 teaspoon garlic powder
- 2 14.5-ounce cans diced tomatoes
- 1 15-ounce can beans, kidney, drained and rinsed
- 6 cups rice, brown, cooked
Directions
- Spray skillet with cooking oil spray.
- Cook onion and pepper over medium heat for 5 minutes or until tender.
- Add garlic powder, tomatoes, and kidney beans.
- Bring mixture to a boil.
- Reduce heat to low and simmer for 5 minutes.
- Serve over rice.
