- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 2 medium green peppers, sliced
- 1 medium red onion, sliced
- 1 small jalapeno pepper seeds removed for less heat
- 1 tablespoon oregano
- 1 cup basmati rice
- 1 15-ounce can black beans, drained and rinsed
- 2 cups frozen corn thawed and drained
- 3 cups water
- 1/2 cup cilantro, chopped
- 1/2 cup Monterey Jack cheese, shredded
- 1 medium lime, cut into wedges
Directions

- Remove chicken and place on plate, cover to keep warm. Drain fat from skillet.
- Add the peppers, onion, and jalapeno to hot skillet. Cook until softened, about 3-4 minutes.
- Add oregano to peppers and onions, cook about 30 seconds until fragrant.
- Add rice, beans, corn, and water to the peppers and onions. Place chicken on top.
- Bring liquid to a boil. Cover, reduce heat to low, and simmer 15-20 minutes or until rice is tender.
- Top with cilantro and cheese. Serve with lime wedges.
Recipe Tips
Use any rice. If substituting white rice for brown rice, increase water to 4 1/2 cups and increase simmer time to 25-30 minutes.
Try adding sliced avocado with the cheese and cilantro.
Make sure the chicken reaches an internal temperature of 165 degrees F.
