Warm Potato-Scallion Salad

Ingredients
- 2 pounds small potatoes
- 1/2 cup scallions (green onions), chopped
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 2 tablespoons lemon juice
- 2 teaspoons Dijon mustard
- 4 tablespoons fresh dill weed
- 1/4 cup red onions, diced
Directions
- Wash potatoes and put in a large pan. Cover with water and boil for 15-20 minutes until tender.
- Drain potatoes and cut into quarters.
- In a large mixing bowl, combine potatoes, and scallions. Cover to keep warm.
- In a separate bowl, combine oil, vinegar, lemon juice and mustard. Mix in the dill weed and onion.
- Pour liquid mixture over the potatoes and mix until coated.
