Veggie Rice Pilaf

Ingredients
- 2 cups low sodium chicken broth or vegetable broth
- 1 tablespoon margarine or butter
- 1 cup rice, uncooked
- 3/4 cup mixed frozen vegetables
- 1/3 cup onion, chopped
- 1/4 teaspoon pepper
Directions
- Preheat oven to 350° F.
- Bring broth to a boil. In a 1-quart casserole dish combine boiling broth and margarine or butter. Stir until melted.
- Stir in rice, vegetables, onion, and pepper. Cover and bake for 35 minutes or until rice is tender and liquid is absorbed.
