Instructions
  1. Preheat oven to 350° F.
  2. Bring broth to a boil. In a 1-quart casserole dish combine boiling broth and margarine or butter. Stir until melted.
  3. Stir in rice, vegetables, onion, and pepper. Cover and bake for 35 minutes or until rice is tender and liquid is absorbed.
