Turkey and Scallion Shepherd's Pie

Ingredients
- 2 teaspoons olive oil
- 4 each scallions, washed and sliced
- 3 medium carrots, sliced
- 3 cloves garlic, chopped
- 3 tablespoons flour
- 2 cups low sodium chicken, vegetable or turkey broth
- 2 teaspoons fresh sage, or 1/2 teaspoon dried (optional)
- 2 cups cooked turkey, diced
- 1 cup frozen peas
- 1/4 teaspoon salt
- 2 cups mashed potatoes
Directions
- Preheat the oven to 425°F. Lightly grease a deep pie pan or baking dish.
- In a skillet, heat oil over medium. Add scallions and carrots and cook until carrots begein to get soft, about 5 minutes. Add garlic and cook for one minute.
- Add 1/3 cup of broth and stir until the liquid is mostly evaporated. Stir in the flour.
- Add sage (if using) and continue to stir for about 2 minutes until the flour begins to turn light brown.
- Add remaining broth and stir continuously until it simmers and the sauce thickens.
- Add turkey, peas, and salt. Add pepper if you'd like. Transfer the mixture to the greased pan.
- Spread mashed potatoes evenly over the top. Set onto a cookie sheet and bake until the top is golden, 20-25 minutes.
Recipe Tips
If you don't have scallions, use one medium yellow onion or two medium leeks.
