  1. In a large skillet, heat oil over medium heat. Add the turkey, onion, and pepper. Cook until meat is browned, about 5-8 minutes.
  2. Add remaining ingredients and bring to a boil. Reduce heat to low, cover, and simmer until rice is tender, about 30 minutes.
  3. Serve warm.

Recipe Tips

Use any type of rice in this recipe.  If using brown rice, increase cooking liquid to 2 1/2 cups and cooking time to 35-40 minutes.

Add 1 red pepper, 1 4-ounce can of green chiles, or 1 cup of frozen corn for added fiber and flavor.

Top with salsa, avocado slices, or 2 tablespoons of low-fat shredded cheese.
