Slow Roasted Salmon with Grape Salsa

Ingredients
- 1 lb salmon fillets
- 1 tbsp olive oil
- 2 cups seedless red grapes
- 1 jalapeno
- 2 green onions
- 2 tbsp chopped cilantro
- 2 tbsp red wine vinegar
- 1 tsp minced garlic
Directions
- Preheat the oven to 275°F. Lay salmon on a parchment-lined baking sheet and drizzle with olive oil. Season with salt (in moderation) and pepper. Roast until the salmon flakes easily and is cooked through, about 20 min.
- Meanwhile, prepare the salsa. Halve the grapes and mince the jalapeño, removing the core. Slice the green onions. Chop the cilantro. Place grapes, jalapeño, and green onions in a bowl with chopped cilantro, vinegar, and garlic. Stir to combine. Cover with plastic wrap and place in the refrigerator until salmon is cooked.
- Remove salmon from oven and top with grape salsa
