Slow Cooker Chicken and Sweet Potatoes

Ingredients
- 1 tablespoon canola oil
- 5 6-ounce chicken thighs, bone-in, skin removed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 pounds sweet potatoes, peeled and cut into large pieces
- 1 large white onion, cut into large pieces
- 1 teaspoon dried thyme
- 1/2 cup white rice, uncooked
- 1 cup water
Directions
- In a large skillet, heat oil over medium-high heat. Sprinkle chicken with salt and pepper.
- Add chicken to the skillet and cook each side until browned, about 4 minutes each. Remove from heat.
- Coat slow cooker insert with non-stick spray. Place potatoes and onion into slow cooker, top with chicken.
- Sprinkle with thyme, cover, and cook on high heat for 2 1/2 hours.
- Add rice and water into crock pot. Re-cover and cook another 1 hour or until tender.
Recipe Tips
You can also use brown rice, just increase water to 1 1/2 cups.
Use chicken breasts in place of chicken thighs.
