Skillet Pork Chops with Potatoes

  1. Heat oil in a large skillet over medium heat. In a small bowl combine the parmesan, salt, pepper, garlic powder, and onion powder. Set aside.
  2. Toss pork chops with flour and add to the skillet. Cook for 4 minutes each side until browned. Remove from heat.
  3. Add onions to skillet and cook 5 minutes until starting to brown. Add chops back into skillet.
  4. Sprinkle 1/2 of the cheese mixture over the pork chops. Top chops with potatoes and then sprinkle remaining cheese mixture over potatoes.
  5. Pour water and lemon juice over chops and cover skillet.
  6. Reduce heat to low and simmer 35 minutes or until vegetables are tender and pork registers 145 degrees F internal temperature.
  7. Serve warm.

Recipe Tips

Use any type of potato- red potatoes are especially delicious.

Add 1 10-ounce package of frozen spinach for added fiber.

Try any herbs and spices you like in this recipe- tarragon, oregano, rosemary, or red pepper flakes are great!
