Simple Coleslaw
Cabbage has about the same amount of nutrition you find in kale, but it comes in more colors! Coleslaw is an easy side dish that fits with just about any meal.

Ingredients
- 6 cups cabbage, shredded
- 1 large carrot, peeled and shredded
- 2 tablespoons mayonnaise, light
- 1/2 cup apple cider vinegar (substitute with white vinegar)
- 3 tablespoons sugar
- 1 teaspoon yellow mustard
- 2 teaspoons celery seed (optional) or 1 stalk celery, thinly sliced
- 1/4 teaspoon salt
Directions
- Place the shredded cabbage and carrots in a large bowl.
- In a separate bowl add mayonnaise, vinegar, sugar, mustard, and salt. If using celery seed, add that too.
- Mix the cabbage and carrots well with the dressing.
- Chill in the refrigerator for at least 1 hour before serving.

Use a mixture of red and green cabbage for a colorful slaw.
