Ratatouille Over Pasta

Ingredients
- 1 tablespoon vegetable oil
- 1 medium eggplant, peeled and cut into 1" cubes
- 1 small zucchini, cut into 1" cubes
- 1 medium onion, chopped
- 1 16-ounce jar (2 cups) salsa
- 1 pound pasta, cooked
Directions
- Heat oil in a skillet. Add eggplant, zucchini, and onion. Saute over medium heat for about 10 minutes, or until soft.
- Pour in salsa, stir and simmer covered over low heat for about 10 minutes.
- Serve over cooked pasta.
