Instructions
  1. Heat oil in a skillet. Add eggplant, zucchini, and onion. Saute over medium heat for about 10 minutes, or until soft.
  2. Pour in salsa, stir and simmer covered over low heat for about 10 minutes.
  3. Serve over cooked pasta.
