Mini Meatloaves with Roasted Apples

Ingredients
- 1 lb lean ground beef or lean ground turkey
- 1 small zucchini grated
- 1/3 cup seasoned bread crumbs
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tbsp Dijon mustard
- 2 small apples cored and cut into 8 wedges each
- 1 tsp fresh rosemary chopped (optional)
- 1/4 tsp cayenne pepper
- 1 tbsp extra virgin olive oil
Directions
- Preheat oven to 425 ℉. Line a rimmed baking sheet with foil.
- In large bowl, combine ground meat, zucchini, bread crumbs, and salt and pepper. Form into 4 meatloaves and place on baking sheet; brush with Dijon.
- Toss apple wedges, rosemary, cayenne, olive oil, and pinch salt; arrange around meatloaves. Bake for 30 minutes or until loaves are cooked (165 ℉).
