Lemony Cream of Chicken Soup

Ingredients
- 1/2 teaspoon canola oil
- 1 medium onion, chopped
- 1 48-ounce container chicken broth
- 2 cups water
- 1 12.5-ounce cans chicken, drained
- 3/4 cups brown rice, uncooked
- 1 10.75-ounce can cream of chicken soup
- 3/4 cup lemon juice
Directions
- Heat oil in a large soup pot over medium heat. Add onion and cook 5 minutes until soft.
- Add chicken broth, water, chicken, and rice. Lower heat to medium-low and simmer 25-30 minutes until rice is almost tender.
- Add cream of chicken soup and lemon juice. Cook additional 5-10 minutes, stirring occasionally, until heated through.
- Serve warm.
Recipe Tips
Add carrots and celery for extra fiber.
Use any type of rice. If using white rice, decrease simmer time to 15-20 minutes.
Freeze leftovers in individual serving sizes for easy meals. Use within three months.
