Grilled Pork Chops with Fresh Plum and Basil

Ingredients
- 1 lb thin boneless pork chops
- 2 tbsp olive oil divided
- 3 ripe plums
- 1 lemon
- 2 tsp sugar
- 1/2 tsp crushed red pepper
- 5 leaves Fresh basil
- 4 cups baby spinach
Directions
- Set grill or heat grill pan to medium-high. Brush the pork chops with 1 tbsp of the oil and season with salt. Grill pork chops 4–5 min. per side.
- Meanwhile, pit and thinly slice the plums. Into a medium bowl, grate the zest and squeeze the juice from the lemon. Add plums, sugar, red pepper, and remaining 1 tbsp olive oil. Toss to combine.
- Chop the basil. Divide spinach among plates. Top with pork chops. Spoon plums over pork chops. Garnish with basil.
