Dirty Rice
This pan fried rice won't disappoint. The beef and beans add protein while the vegetables pack in nutrients. Enjoy as a main dish or a side.

Ingredients
- 1 large egg (or 2T egg powder and 1/4 cup water)
- 1/4 cup water
- 2 tablespoons vegetable oil
- 1/4 pound beef, ground, lean
- 1/2 onion, chopped
- 1/2 green pepper, chopped
- 1 8-ounce can peas, low sodium, drained and rinsed
- 1 cup beans, kidney, canned, low sodium drained and rinsed
- 4 cups rice, brown, cooked, cooled
- 1/4 teaspoon black pepper
Directions
- In a small bowl, beat egg with water.
- In a large skillet, cook ground beef, onion, and green pepper in oil over medium heat for about 10 minutes.
- Add egg mix to skillet. Scramble eggs over medium heat for about 5 minutes.
- Add peas and beans to skillet. Cook for about 5 minutes.
- Add rice and pepper to skillet. Stir to break up any clumps of rice. Cook for about 5 minutes. Serve hot.
