Directions

  1. Preheat oven to 425º.
  2. Combine water, onion and butter in a saucepan and bring to a boil.
  3. In a bowl, combine potato flakes, dry milk, egg mix and pepper.
  4. Remove boiling water from heat. Stir in potato mixture until absorbed.
  5. Add cheese to the mixture and stir.
  6. Drain the spinach and then spread on the bottom of an oiled 8 x 8 pan. Spread potato mixture on top.
  7. Bake for 20 minutes until top is light brown.
