Calabacitas
Calabacitas (kahl-ah-ba-SEE-tas) translates to "little squash" in English. It is often served as a side dish, but can easily be a meal in itself.

Ingredients
- 2 tablespoons oil
- 1 medium onion, chopped
- 2 medium zucchini, diced
- 2 medium tomatoes, diced
- 1 can low sodium corn drained
- 1/2 cup low-fat cheese, shreded
Directions
- Heat oil in a large skillet over medium heat.
- Add onion and cook for 3-5 minutes.
- Add all other vegetables and saute until vegetables are firm, but tender.
- Remove vegetables from heat.
- Sprinkle cheese over vegetables, mix throughout, and allow cheese to melt.
Recipe Tips
Make it a meal by serving over rice or with flour tortillas.
Add some protein by draining and rinsing one can of pinto, white, or kidney beans.
