Baked Salmon Omelet

Ingredients
- 4 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup low fat milk
- 8 ounces salmon, canned
- 3/4 cup Swiss cheese, shredded
- 1 bunch scallions, chopped
- 2 cloves garlic, minced
- 1 small tomato, sliced
Directions
- Preheat oven to 350ºF. Grease an 8x8 baking dish.
- In a large bowl, beat the eggs until blended.
- Mix in the salt, pepper, milk, salmon, cheese, scallions, and garlic.
- Pour the mixture into the 8x8 pan and top with sliced tomatoes.
- Bake in the oven for 30-35 minutes or until set and lightly browned.
