Boiled Potatoes with Herb Butter

Ingredients
- 4 cups baby red potatoes
- 4 tbsp butter softened
- 2 tbsp chopped parsley
- 2 tbsp chopped chives
- 2 tbsp chopped dill
Directions
- Cut the potatoes into halves and place in a large pot of cold water. Season with salt. Partially cover pot and heat to a boil on high. Reduce heat to simmer. Cook 16–20 min., until potatoes are tender.
- Drain potatoes and return to empty pot. Add the butter and herbs. Gently toss until well coated. Season with salt and pepper to taste.
