Boiled Potatoes with Herb Butter

  1. Cut the potatoes into halves and place in a large pot of cold water. Season with salt. Partially cover pot and heat to a boil on high. Reduce heat to simmer. Cook 16–20 min., until potatoes are tender.
  2. Drain potatoes and return to empty pot. Add the butter and herbs. Gently toss until well coated. Season with salt and pepper to taste.
