Ingredients
- 1 tablespoon vegetable oil
- 1 medium onion, sliced
- 1/2 teaspoon black pepper
- 1/4 teaspoon oregano, dried
- 1/4 teaspoon basil, dried
- 1 medium yellow squash, sliced
- 1 medium zucchini, sliced
- 1 red pepper, chopped
Directions
- Heat the oil in a frying pan over medium-high heat. Add the onion slices.
- Cook until slightly soft, about 4-5 minutes. Add spices and stir until onions are coated.
- Add remaining vegetables and cook for 3 to 5 minutes until vegetables are just tender.
Recipe Tips
Add sliced cooked chicken or a scrambled egg for extra protein.
